Tikka Masala

There’s something deeply comforting about a warm, creamy tikka masala especially when it’s quick, simple, and made with wholesome ingredients you already have at home. This version is perfect for busy days when you still want something nourishing and full of flavor.
Ingredients:
300g chicken thighs
1 tin tomato purée
2 tablespoons garam masala
1/4 onion (chopped)
1 teaspoon ginger (grated)
1 clove garlic (minced)
1 teaspoon coriander seeds (crushed)
100g Greek yoghurt
50ml soy cream
Start by gently sautéing the chicken and remove it from the eat, saute the
onion with the ginger and garlic until fragrant. Add the garam masala and coriander seeds, letting the spices toast slightly to release their aroma. Stir in the chicken, allowing it to brown and soak up all those rich flavors.
Next, pour in the tomato purée and let everything simmer until the chicken is fully cooked and tender. Reduce the heat and stir in the Greek yoghurt and soy cream to create that signature creamy texture without feeling too heavy.
Let it gently bubble for a few more minutes, then serve with rice or warm flatbread. It’s the kind of meal that feels indulgent but is actually simple, balanced, and made with love—just how home cooking should be.
