Chocolate banana bread




Ingredients:


4 ripe bananas

2 eggs

½ cup maple syrup or honey

½ cup coconut oil, melted

1 teaspoon vanilla

1 ¼ cups spelt flour

¼ cup raw cacao powder

½ teaspoon cinnamon

1 teaspoon bicarbonate of soda

½ teaspoon salt

2 tablespoon chia seeds

30g dark chocolate chopped

30g walnuts, roughly chopped



Method:

  • Pre-heat the oven to 180 degrees.

  • Line a loaf tin with baking paper.

  • Mash 3 of the bananas in a mixing bowl.

  • Add the beaten egg, maple syrup, coconut oil and vanilla and mix well.

  • Sift the flour into a separate bowl with the cinnamon, bicarbonate of soda and salt.

  • Add the dry ingredients.

  • Add the chia seeds, chopped chocolate bits and walnuts and mix to combine.

  • Pour the batter into the prepared loaf tin.

  • Cut the remaining banana lengthways down the middle & place the two halves on top of the batter and press down a little.

  • Bake in the oven for 55-60 mins until a skewer placed in the centre of the loaf comes out clean.
