Tabbouleh Salad Recipe

If you're looking for a fresh, nutritious side dish that takes just minutes to prepare, tabbouleh is one of my favourites. It's packed with fresh herbs, vibrant flavours and wholesome ingredients that are naturally rich in fibre, vitamins and antioxidants.
What I love most is that parsley isn't just a garnish here—it's the star of the dish! Combined with juicy tomatoes, refreshing mint, spring onions and a simple lemon and olive oil dressing, you get a salad that's light, satisfying and perfect alongside grilled meat, fish or even on its own.
Ingredients
3 tablespoons extra-virgin olive oil
3 tablespoons lemon juice
¼ teaspoon salt
¼ teaspoon black pepper
couscous
3 bunches fresh curly parsley, finely chopped (about 3 packed cups)
2 tomatoes, finely chopped
2 green onions, finely chopped
¼ cup fresh mint, finely chopped
Simply cook the couscous as per packet instructions, chop everything finely, combine all the ingredients, toss well and let it rest for around 15–20 minutes before serving. This allows all the fresh flavours to come together beautifully.
It's simple, colourful and proof that healthy food can be incredibly delicious.
