Stawberry cheescake

Sometimes you just want cheesecake… but you also want to feel good after eating it. This is one of my go-to healthy desserts when I want something creamy, satisfying, and still aligned with my nutrition goals. It’s simple, high in protein, and honestly tastes like a proper treat.
Ingredients
25g Digestive crumbs
1 tablespoon light butter
80g Hercules Kolios 0% fat Greek yoghurt
30g Light Creamcheese
1 tablespoon honey/ maple syrup
1 teaspoon vanilla essence
5g gelatin + 35ml water
2 strawberries
2g gelatin + 15g water (for topping)
Method
Start by mixing the digestive crumbs with the melted light butter. Press into a small mould to form the base and place in the fridge to set.
In a bowl, mix the Greek yoghurt, Light, creamcheese, honey, and vanilla essence until smooth. Dissolve the gelatin in warm water, then stir into the yoghurt mixture. Pour over the base and refrigerate until set.
For the topping, melt the strawberries on the stove, then mix in the dissolved gelatin. Pour on top of the cheesecake layer and chill again until firm.
It’s the perfect little dessert when you want something sweet, but still nourishing your body 🤍
