Spinach, Egg & Spirulina wrap

There was a time where I knew spinach was good for me… but I didn’t always enjoy eating it. And I know I’m not alone. A lot of people struggle with the taste or texture of leafy greens.
But here’s the thing: when you blend spinach, it becomes SO much easier to consume. No big leafy texture, no overpowering taste, just pure nutrition going into your body. Spinach is amazing for energy, iron levels, immunity and overall wellness. And when I add spirulina, it’s like giving my body an extra nutrient boost without complicating my meals. As a busy mum and someone who’s always on the go, I love meals that are simple, quick, and actually make me feel good.
This wrap is one of my go to options when I want something nourishing but effortless and something I can have when I'm out an about.
Ingredients:
2 eggs
1 egg white
Handful fresh spinach
½ tsp spirulina
Salt & pepper
Method:
Blend everything
Pour into a hot non-stick pan
Cook like a thin omelette, flip and done.
You can eat it as is, or fill it with Salmon or chicken, avocado, or cottage cheese.
If you struggle with greens, try blending them. Small changes like this really do add up over time
