Homemade Pistachio Butter

Pistachio butter is one of those little luxuries that feels gourmet, but is surprisingly simple to make at home. With just one ingredient and a bit of patience, you can create a rich, creamy spread that’s packed with flavor and goodness.
All you need is a batch of pistachios and a good quality blender. Start by blanching your pistachios simply boil them briefly, then drain and rub them in a clean towel to remove the skins. This step helps achieve that vibrant green color and smoother texture.
Next, spread the peeled pistachios on a tray and roast them in the oven at 180°C for about 10 minutes. This enhances their natural oils and deepens the flavor, which is key for a delicious butter.
Once roasted, transfer them straight into a powerful blender. Blend in 5-minute intervals, giving your machine a break in between to avoid overheating. Don’t forget to scrape down the sides of the bowl regularly, this helps everything blend evenly.
At first, the pistachios will turn into a crumbly mixture, but keep going. Slowly, they’ll release their oils and transform into a smooth, creamy nut butter.
That’s it! No added oils, no sweeteners, just pure pistachio goodness. Perfect on toast, drizzled over oats, or eaten straight from the spoon.
