Bagel & Avo Egg

There’s something so satisfying about keeping meals simple, nourishing, and homemade.
Today’s plate is one of my favourites: a homemade spelt bagel, paired with 2 whole eggs, 2 egg whites, and a small piece of avocado. Spelt is a great alternative to refined flour, it’s gentler on digestion and helps keep you fuller for longer without that heavy feeling.
The avocado adds those good, healthy fats that support hormones and satiety, but by keeping the portion small, we’re still keeping calories low.
For flavour, I keep it fresh and light with mustard and a squeeze of lemon. If you’re into heat, you can definitely add spicy sriracha or chili flakes for a fiery kick .
Adding a little Greek yoghurt is also a great way to bump up the protein.
Recipe:
Egg Mix:
2 boiled whole eggs
2 boiled egg whites
1 tablespoon Greek yoghurt
½ tablespoon lemon juice
½ teaspoon mustard
Chop the eggs and just mix everything together.
Spelt Bagel
40g Greek yoghurt
30g spelt flour
1 teaspoon olive oil
1 tsp baking powder
Mix into a dough, shape into a bagel, and cook or bake until lightly golden at 180 degrees for around 18 minutes.
