Pistachio Oat Bake

Ingredients:


½ cup oats

½ ripe banana (the riper the better)

¼ cup milk of choice

1 egg

¼ tsp baking soda

Pinch of salt

1 tsp honey

A few pistachios (roughly chopped, for topping and texture)


Instructions:

  1. Preheat oven to 180°C. Lightly grease a ramekin or small baking dish.

  2. In a blender, blend the banana, egg, milk, and honey until smooth.

  3. Stir in oats, baking soda, and salt until fully combined.

  4. Pour the mixture into your ramekin and top with chopped pistachios.

  5. Bake for 18-20 minutes, or until golden on top and firm in the center.

  6. Let it cool slightly before enjoying. Optional: drizzle with a bit of extra honey or yogurt on top.
