Pane Cioc

(serves 6)

Ingredients:

  • 50g greek yoghurt 0% fat,

  • 100g self raising flour lamb brand,

  • 50g almond milk

  • 1/2 tsp baking powder

  • 7 g coconut oil

  • 1 egg

  • 30g chocolate chips


Method:

  • Preheat your oven to 180°C

  • In a mixing bowl, whisk together Greek yogurt, almond milk, and the egg until smooth. Melt the coconut oil and stir it into the batter.

  • In a separate bowl, mix together the self-raising flour and baking powder.

  • Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing to keep the batter light.

  • Gently fold in the chocolate chips.

  • Pour the mixture in a baking tray lined with parchment paper

  • Bake for 25 -30 minutes, or until a toothpick inserted in the center comes out clean.
