(serves 6)

Ingredients:
50g greek yoghurt 0% fat,
100g self raising flour lamb brand,
50g almond milk
1/2 tsp baking powder
7 g coconut oil
1 egg
30g chocolate chips
Method:
Preheat your oven to 180°C
In a mixing bowl, whisk together Greek yogurt, almond milk, and the egg until smooth. Melt the coconut oil and stir it into the batter.
In a separate bowl, mix together the self-raising flour and baking powder.
Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing to keep the batter light.
Gently fold in the chocolate chips.
Pour the mixture in a baking tray lined with parchment paper
Bake for 25 -30 minutes, or until a toothpick inserted in the center comes out clean.
