Date energy balls


INGREDIENTS - CHOCOLATE BALLS

1 & 1/2 cups mediool dates

3 tbsp oats

3 tbsp cocoa powder

1 scoop protein powder

2 tbsp honey

2 tbsp almond butter

1 tsp vanilla extract

1/2 tsp sea salt


CHOCOLATE COATING

1/2 cup dark chocolate

1/2 tsp coconut oil


In a food processor, blend 1½ cups Medjool dates (pitted) until they form a sticky paste. Add 3 tbsp oats, 3 tbsp cocoa powder, 1 scoop of your favorite protein powder, 2 tbsp honey, 2 tbsp almond butter, 1 tsp vanilla extract, and ½ tsp sea salt. Blend until well combined — the mixture should be sticky but firm enough to roll. Roll into small balls and chill in the fridge for 15–20 minutes.

For the chocolate coating, melt ½ cup dark chocolate with ½ tsp coconut oil. Dip each ball into the chocolate and place on parchment paper. Chill again until the coating sets.

Store in the fridge and enjoy all week long (if they last that long 😉)!
