Chocolate Quinoa Crunch

(Makes 6 servings)
Ingredients needed:
75g dark chocolate
25g milk chocolate
1 tablespoon pistachios, roughly chopped
1 tablespoon hazelnuts, roughly chopped
1 tablespoon dried cranberries, chopped
1/4 cup raw quinoa
Method
Heat quinoa in a dry pan over medium heat, stirring until it pops and becomes crispy. Cool.
Melt dark and milk chocolate in the microwave or over a double boiler until smooth.
Stir in puffed quinoa and pread on parchment paper or shape into a chocolate mould. Top with pistachios, hazelnuts, and cranberries.
Chill for 30 minutes until firm.
