Breakfast Burittos

Serves 2:
Ingredients:
1 Diced Brown Onion
500g Extra Lean Beef Mince
1/2Tsp Salt
1/2 Tsp Onion Powder
1/2 Tsp Garlic Powder
1/2Tsp Sage
1/2 Tsp Thyme
1Tsp Smoked Paprika
50ml Worcestershire Sauce
1 tbs Tomato Paste
100g passata
4 eggs
2 Warm Tortillas
homemade Sriracha Mayo (per burrito - optional)
20g Low Fat Grated Cheese
Method:
-Heat a non-stick pan over medium heat and add the diced onion. Sauté for 2–3 minutes until soft. Add the extra lean beef mince and cook until browned, breaking it apart with a spatula. Stir in the salt, onion powder, garlic powder, sage, thyme, and smoked paprika.
-Add Worcestershire sauce, tomato paste, and passata. Mix well and let it simmer for 5–7 minutes until thickened.
-In a separate pan, scramble the eggs to your desired consistency. Lightly season with salt.
-Lay out the warm tortillas. Divide the beef mixture evenly between the two tortillas. Add scrambled eggs on top. Sprinkle with low-fat grated cheese. Drizzle with Sriracha mayo (if using).
-Fold in the sides of the tortilla and roll tightly into a burrito. Toast or airfry until crispy
